Yay Day Bolognese
Makes 8 cups or 2 quarts
This recipe makes you want to shout with joy, “Yay Day!” It not only uses one of our favorite That Girl wines but serves enough for a party. If you’re not having people over, freeze half and toss the other half with pasta or use as a topping for pizza.
1 lb. ground beef
1 lb. sausage, in casing
Salt, to taste
1 onion, sliced
3-4 cloves garlic, smashed with skins removed
1 tablespoon tomato paste
1 cup That Girl Yay Day
2 14-ounce or 1 28-ounce can tomato
1 lb. pasta of choice
1 cup grated pecorino or parmesan cheese
In a large skillet heat a glug of olive oil up over medium high heat. Add ground beef and sausage (removing meat from casing) and cook until browned, breaking up with the back of a wooden spoon.
Season with a bit of salt and add onion and garlic, stirring until onion is translucent. Add tomato paste and stir in, cooking for about one minute and then add Yay Day. Allow the wine to simmer and reduce to amount half. Add tomatoes and bring to a simmer. Simmer for at least 30 minutes and season again with salt, to taste.
Remove half of this and save for another time if you’d like. Otherwise use two lbs. of pasta.
Cook pasta until al dente according to package instructions. Add pasta to skillet with the sauce and toss with cheese.
